For 4-6 hours almost every evening there is a line out the door at the Vortex in L5P[1]. For those hours, every table is full as often as they can be cleared. One server working three 4-tops that have 90-minute meals is going to serve 48 people during that short shift.

I have never taken a large party (8-12 people) to that Vortex and not had our server ALSO serving at least one other table, so the seats-per-server is actually closer to 18 than to 12, and that pushes the total of 48 up to 72, and that's still on what amounts to a short shift.

Is 90 minutes an unrealistic estimate for the average meal length?

[1] This is the most average-priced restaurant that I frequent, entrees from $8-15 in general. Better or more data points are welcome, although my experience at Highlander and Hard Rock and Savage Pizza and Mellow Mushroom closely follows these numbers.
